A TASTE OF HOME: JOHNNY CAKE
Golden on the outside, soft and crumbly within, Bahamian Johnny Cake is neither quite bread nor quite cake. Made from a simple mixture of flour, butter, sugar and milk, it has long been a favourite accompaniment to souse, stew fish and other traditional dishes. Every family seems to have its own version—soft or firm, sweet or barely sweet—but it is always best served warm. How did your family make it?
There’s an old favourite Bahamian song about it called “Mama Bake a Johnny Cake, Christmas Coming”. For years I taught it to the children at St Paul’s School where I used to teach. Here’s a wonderful rake-and-scrape recording made on Andros in 1958 by the Fresh Creek Dance Band.
Freeport-born artist Sheldon Saint has spent more than 30 years capturing the people, landscapes and quiet rhythms of Bahamian life. Working in oils and watercolours, the self-taught artist is especially known for his sensitive portrayals of ordinary island moments—scenes filled with simplicity, dignity and a deep affection for home. A self-described cultural ambassador, he is committed, in his words, to elevating Bahamian art on the world stage. He says “I paint to preserve the beauty of my people”.
SEE ONE DERE
In See One Dere, four little boys lean towards the sea, absorbed by whatever has caught their attention below. Painted in watercolour, it is a wonderfully familiar scene of childhood curiosity—the kind of small, fleeting moment Sheldon preserves so beautifully in his work.
